(pp. 72-74) Idiosyncrasies aside, his chapter on catering (which "include wines, spirits, cigars, cigarettes, minerals, liqueurs, and cordials") is a valuable cookbook in itself, yet his chapters on staff management, buying of inventory, and bars are all of interest to cookery enthusiasts.
